DescriptionJob Summary: Be a working manager - leading out and directing other cooks and student helpers utilizing them for preparation of all hot foods for meals, and any additional special orders, or evening banquets. Duties and Responsibilities: • Be alert to the student employee’s attendance and performance. • Notify the Cafeteria Manager of situations, problems or suggestions that would improve the program. • Understand and practice the best and proper methods of quality preparation for each item on the menu, and to maintain the highest of standards in all food production. • Understand, maintain, and practice good sanitation and cleaning procedures at all times. ? Practice safe food handling ? Keep the kitchen as clean and neat as possible during the day ? Maintain a clean and sanitary work environment - being prepared for Health Department at all times • Check the workers board for daily menu and for any special functions • Oversee and help with preparation of Lunch and Supper • Assign cooks and students workers their jobs for the day • Oversee and help prepare items needed for special functions and make sure they are ready on time • Organize and straighten cooler daily-making sure all food items are on the right shelves and dated • After organizing cooler, check leftovers and confer with menu planner as to when to implement them into the menu again • Walk through freezer daily making sure your department items are straight and in proper places • Evaluate leftovers in freezer and confer with menu planner as to when to implement them into the menu again • Plan for the next day – check to see if you have any orders going out or banquets • Instruct cooks and student workers in time management • Instruct cooks on how to manage student workers with on the job training • Oversee and lead out in the training of new student workers. • Track food waste in cook’s dept-be innovative in how to reduce food waste and over production of food • Be creative with new menu ideas • Be innovative with ideas to implement special food sales and promotions • Work with Cafeteria Manager in establishing standardized recipes • Make a monthly days off schedule for all the cooks in your department • Take your turn and lead out in Sabbath and weekend duty. • Maintain a Christian atmosphere in your area by precept and example. • Perform all other reasonably business-related functions as assigned Special Requirements: Must have an expressed commitment to Jesus Christ, the teachings and mission of the Seventh Day Adventist Church, a SDA church member in good and regular standing, and a desire to serve in a cooperative, spiritually redemptive, and soul-winning atmosphere.
